Chef Alan Orreal

Chef Alan Orreal started culinary training at the School of Food Brisbane in 1985 and has over 20 years of dedicated culinary experience, ranging from five-star hotels, airline catering, and fine dining restaurants. Though born in Australia, Alan has lived and worked in Asia for a large part of his life. His style of cuisine can only be described as modern global cuisine that is dynamic and borderless. Alan¹s influences are driven very much from great chefs that he has trained under, such as Cheong Liew and Tony Bilson; his extensive travels throughout the culinary world and his working experiences in countries such as Singapore, Taiwan, Sri Lanka and his home Australia.

While in Singapore 2000-2004 Alan was made a member of the National Culinary Squad where he honed his International Culinary Competition Skills under the tutelage of Otto Weibel and Peter Knipp. Alan subsequently represented in the Luxemburg World Cup, FHA and was chosen to go to South Africa for the World Cooks Tour 2003. Individually, Alan has carried away coveted trophies along with Gold, Silver and Bronze medals at numerous culinary events including FHA, Penang Battle of the Chefs and Culinary Art. Alan Orreal is currently the National Culinary Coach for the Japanese National Junior Team who have just brought home Gold and Silver medals from the 2008 Culinary Olympics.

Working from the premise that Cuisine is the definitive of Culture, Alan is a strong advocate of international apprenticeship and academic training coupled with preservation and development of National Cuisine training. It is for that reason that he is a guest lecturer at food colleges across Asia and gives regular classes in the Chefs Guild of Lanka¹s Culinary School.

Alan is presently Culinary Production Manager for Resorts World Sentosa, Universal Studios Singapore; he is the founder and advisor to the Sri Lankan Junior Chefs Club and an Executive Committee Member Advisor of the Chefs Guild of Lanka. Additionally this year Alan has been elected to the World Association of Chefs Societies (WACS) MCC committee as Advisor for the Global Development of Junior Chefs and he is the Convener of the 2010 Billy Gallagher Junior Chefs Forum at the WACS Congress Santiago Chile 2010. Currently, Alan is working towards his Master Chef Certification now that he has completed the WACS certified Judge programme.
